What’s wine without good food? Before we dive in, we want to start by saying that the word “good” is subjective because you could pair a bottle of Krug with anything from potato chips to caviar, or a bottle of Papapietro-Perry Pinot Noir with anything from rotisserie chicken to black truffle steak. When done right, a pairing brings a lot to the palette.
Food and wine pairings enhance the flavor of both what’s on your plate and what’s in your glass. When you start to experiment with pairings, think: “What grows together, goes together.” In most cases, red wines create congruent pairings (many shared compounds and flavors), then white and sparkling wines create complementary pairings (few shared compounds and flavors, e.g. coconut and lime).
Here are some tips for food and wine pairings:
Foods and wines should have similar flavor intensities.
For protein dishes, match the wine to the sauce or seasoning.
Fatty foods need acidic or high-alcohol wines – most sparkling wines also work well.
Light-intensity meals like fish or grilled chicken pair best with white wine.
Bold-flavored dishes and red meats most often call for red wine.
Sweet foods need sweeter wines – bitter, too.
For salty foods, choose wines with lower acidity.

Chardonnay food pairings
You’ll find a handful of special chardonnays available on the Coravin Wine Shop. Our inaugural selection of wines included bottles like 2019 Migration Sonoma Coast Chardonnay, 2018 Grgich Hills Estate Chardonnay NV, and 2016 Iron Horse Heart of the Vineyard Chardonnay – all known for their smooth, buttery texture and fruity, oak flavors.
When it comes to pairing chardonnay with food, take notes from it’s texture and flavor profile. Chardonnay pairs well with buttery dishes like:

Pinot noir food pairings
Pinot noir is a sensationally versatile pairing choice. It’s on the lighter side when it comes to body, has low tannins, and features medium-high acidity.

The Coravin Wine Shop launched with some really amazing merlots like 2018 Markham District Series Yountville Merlot, 2018 Duckhorn Napa Valley Merlot, and 2018 L’Ecole No. 41 Estate Walla Walla Merlot.
Merlot is a full-bodied wine with medium-high tannins and medium acidity. It’s usually dry and matches with a wide variety of foods from pizza to beef short rib to BBQ chicken. With flavors like black cherry, plum, and berries, with undertones of bay leafs, vanilla, and mocha… Merlot makes us want to eat.
